HAPPY PI DAY

I'm actually attempting squash cupcakes today (no joke - carrots are still a no, so I'm subbing in acorn squash), so wish me luck. If you're curious about my culinary adventures, here is the original recipes. Below the cut is what I'm actually making.


Ingredients
1/3 cup canola oil
1 cup agave nectar
1.5 tbspn flaxseeds + 4.5 tpsn water
2 cup finely grated acorn squash
1/2 cup currants or chopped dates
1/2 cup chopped pecans
2 tsp pure vanilla extract
2 cups quinoa and millet/other flour
2tsp arrowroot flour
2 tsp baking powder
1 tsp baking soda
1 tsp -1/2 ground cinnamon
1/2 tsp ground ginger
1/4 tsp freshly grated nutmeg
1/2 tsp salt

I don't love millet flour because it absorbs water poorly, but as the secondary flour in the mix, it might do okay, and the gluten-free thing really needs a flour mix. I'm low on options without rice! That's on the soon-to-be-reintroduced list.

Roommates will be getting cream cheese frosting to top it all off, probably store bought. (I know, I know, but SPOONS. I DON'T HAVE THEM.)

I have no idea how the chemistry is going to fall out, but it should be exciting!

YAY FOR PI DAY. XD Squash cupcakes actually sound really delicious. Mmmmm, squash. Recipes with more than five ingredients kind of scare me, though...

Oh wow, that sounds delicious! At first I thought you were going to bake the squash first (as I've done when making pumpkin muffins in the past), but grating sounds intriguing! I hope you tell us how they turn out. :)
