I'm making lasagna tonight for the first time in years! I finally managed to track down some allergy-friendly noodles and I'm really excited about it. I kind of wish they weren't made of rice (rice pasta tends to give me bad sugar spikes and lows), but I'm willing to give it a shot.

Lasagna is a kind of comfort food, though I won't be able to make my mother's recipe; it's full of cottage cheese. That recipe was actually my final project in the cooking portion of Home Economics, back in grade eight. What a disaster! The noodles didn't cook at all, despite being labelled oven-ready, even after over an hour in the oven.

I'm thinking today's experiement will be with tomato sauce, feta cheese, spinach, grated chicken, and eggplant slices, with some dried oregano and basil for flavour.
