That's my qualm about it too.

I'm not entirely sure what the corn syrup does in the recipe, but maybe a dark maple syrup?

I'd say a dark maple syrup would replace it. It's just adding thickness, gooiness and sugariness.

I should maybe make some for my waiteresses and cooks at work and tell them to take a HUGE piece.
